Recipe: Cucumber Soup For One
Summary: Great cold soup for hot summer days!
Ingredients
- 2 cucumbers
1 cup low-sodium chicken stock
1 cup plain nonfat yogurt
1 Tbsp white wine vinegar
1/2 clove garlic minced
1/4 cup minced onion
1/4 tsp salt
1/4 tsp black pepper
Instructions
- Wash cucumbers but do not peel.
- Cut cucumbers into 1-inch chunks and puree in a blender or food processor.
- Add remaining ingredients and blend.
- Refrigerate at least 2 hours.
- Stir before serving.
Quick Notes
Great on a really hot day. You can adjust your seasonings depending on taste.
Variations
Eat by itself or garnish with grated cheese, chopped egg, scallions, chives, avocados or croutons!
